If you would like a question answered please fill out the form on our contact us page.Can we have Welsh Black Beef in anything other than the Gourmet Box? Yes from the a la carte section - but to ensure that it is Welsh Black you must request it in the message box. If there is none in stock it may delay the delivery of your order. If the delay is likely to be long you will be contacted. Orders from the a la carte may often be supplied with Welsh Black but is not guaranteed. Can you freeze my meat for me? Yes. In fact if you want to put all your meat in the freezer it is far better for us to send it to you frozen. This is because we use professional air-blast freezers which freeze the meat far faster than your own domestic freezer. And the faster the meat is frozen the better the quality. There is no problem with the meat defrosting on its way to you. Will it fit in my freezer? Half a lamb sounds quite a lot but if its a small mountain lamb then it will take up no more than half a drawer of a typical upright freezer. Even our largest meat boxes which contain up to 7 kg of meat should fit into a freezer drawer comfortably. How long do you hang the meat? The maturation, or hanging of the meat in a refrigerator before cutting is the most important factor affecting the tenderness and flavour of your meat. We have consulted top chefs and meat industry specialists to make sure we mature your meat to absolute perfection. Our policy is to hang all beef for at least 3 weeks and lamb for at least a week before cutting and packing. Why is your meat a darker colour than meat I see in the supermarkets? This is partly due to maturation - bright red meat is immature meat - and partly due to vacuum packing. Immediately after cutting, your meat is sealed under vacuum in strong, food grade polyethylene bags. This is your guarantee that your meat will reach you without any chance of bacterial contamination. Vacuum packed meat has a long storage time if kept in a refrigerator where it goes on maturing in the bag. We have put a use-by date of 3 weeks after cutting on our labels. The darker colour of vacuum packed meat in no way affects its eating quality. What's the difference between mountain lamb and prime lamb? Mountain lambs are usually raised on the Welsh mountains or on poorer grazing in exposed conditions. By far the most common breed in Wales is the Welsh Mountain. These hardy lambs grow more slowly and tend to be much smaller than prime lambs which can be from a variety of breeds such as Texels or Suffolks and which grow better on good pastures. Although the joint sizes are small we strongly recommend you try mountain lamb when it is in season from late Summer to early Winter. Its distinctive sweet flavour is prized by all who taste it. Outside the mountain lamb season or if you want large joints to feed the family, go for our prime lamb. You won't find better than our organic prime Welsh lamb. |
